Ingredients

  • 1 lb cod fillet, cut into cubes
  • 1 cup lion's mane mushrooms, torn
  • 1 green bell pepper, cubed
  • 1 sweet onion, cubed
  • Wooden skewers
  • Marinade: 1 tsp thyme, 1 tsp oregano, 1 tbsp lemon juice, ½ tsp black pepper, 1 tsp garlic powder, 1 tsp pink salt, 2 tbsp olive oil

Instructions

    Cut cod, mushrooms, peppers, and onion into bite-sized pieces.

    Mix marinade ingredients. Toss cod and mushrooms in marinade and chill for 30 minutes.

    Thread cod, mushrooms, peppers, and onions onto skewers.

    Grill over medium-high heat for 4–5 minutes per side, OR bake at 425°F for 12–15 minutes, turning halfway.
