  • 1 large ripe plantain, OR 1 large ripe banana, OR ½ cup mashed cooked sweet potato
  • 2–4 tbsp buckwheat flour
  • 1–2 tbsp ground moringa
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ tsp cinnamon, ¼ tsp nutmeg
  • Pinch of sea salt
  • 1–2 tbsp coconut oil

Instructions

    Blend the chosen base with eggs, vanilla, cinnamon, nutmeg, and salt until smooth.

    Add moringa and buckwheat flour. Blend briefly or mix with a spoon.

    Let batter rest 3–5 minutes.
