Ingredients
- 1 large ripe plantain, OR 1 large ripe banana, OR ½ cup mashed cooked sweet potato
- 2–4 tbsp buckwheat flour
- 1–2 tbsp ground moringa
- 2 eggs
- 1 tsp vanilla extract
- ½ tsp cinnamon, ¼ tsp nutmeg
- Pinch of sea salt
- 1–2 tbsp coconut oil

Blend the chosen base with eggs, vanilla, cinnamon, nutmeg, and salt until smooth.

Add moringa and buckwheat flour. Blend briefly or mix with a spoon.

Let batter rest 3–5 minutes.
