African Yam Fries with Homemade Cajun Seasoning

Ingredients

  • 1 medium African yam, peeled and cut into thick fries
  • 2–3 cups avocado oil
  • Salt to taste
  • Cajun mix: 1 tbsp paprika, 1 tsp cayenne, 1 tsp cumin, 1 tsp garlic powder, 1 tbsp 21 Seasoning Salute, ½ tsp cinnamon, ½ tsp pink salt

Instructions

    Mix all Cajun mix ingredients in a bowl. Strain through a fine sieve. Set aside.

    Heat avocado oil in a deep frying pan over medium-high heat.

    Fry yam fries for 5 minutes to cook through and soften.

    Remove and let rest for 2 minutes.

    Raise heat slightly and fry again for 2–3 more minutes until crispy.

    Drain on a paper towel.

    Sprinkle with salt and Cajun mix while still hot.
